- 1 cup blackberries
- 3 tablespoons honey

- 1 teaspoon fresh thyme leaves
- 14 ounces baked Brie
- 1/3 cup additional blackberries for topping
- 1 tablespoon pomegranate seeds
- 1/4 cup candied pecans
Instructions
- Combine the blackberries, honey, lemon zest, and lemon juice in a small pan over medium-high heat.
- Bring to a simmer, breaking up the blackberries, and add thyme. Simmer for 5 minutes.
- Preheat the oven to 400°F.
- Score the top of the Brie lightly with a knife.
- Bake the Brie for 10-15 minutes until gooey.
- Pour the blackberry compote over the warm Brie, add toppings, and serve immediately.
Notes
Use high-quality Brie for the best flavor.
Adjust the sweetness of the compote by varying the honey amount.
Monitor the Brie in the oven to prevent overcooking.
