- 4–5 black garlic cloves, peeled and mashed
- 2–3 large shallots, finely sliced
- 1/4 cup extra virgin olive oil
- 1/2 cup vegetable or chicken broth
- 1/4 cup grated Parmesan cheese (optional)
- Salt, to taste
- Freshly ground black pepper, to taste
- Chopped fresh parsley, for garnish
Instructions
- Boil salted water and cook pasta until al dente, reserving 1/2 cup of pasta water before draining.
- In a skillet, heat olive oil and caramelize shallots until golden.
- Add black garlic to the skillet and cook briefly before adding broth.
- Toss drained pasta with the sauce, adjusting with reserved pasta water as needed.
- Stir in Parmesan cheese, season, and garnish with parsley before serving.
Notes
Avoid overcooking the pasta for the best texture.
Adjust the amount of black garlic according to your taste.
