- 4 large Roma tomatoes
- 1/4–1/2 small jalapeño, seeded and stemmed

- 3 large garlic cloves
- ½ teaspoon Mexican oregano
- ¼ teaspoon ground cumin

- ¼ teaspoon freshly ground black pepper
- 2 tablespoons vegetable oil
- 1 ½ large potatoes, peeled and diced
- 1 ½ pounds thinly sliced beef, cut into 1/2″ thick strips
- ½ teaspoon garlic powder
- ½ teaspoon paprika
- ½ teaspoon kosher salt
- ¼ teaspoon freshly ground black pepper
Instructions
- Blend the sauce ingredients until smooth and set aside.
- Sauté diced potatoes in oil until golden brown and set aside.
- Sear thinly sliced beef in the skillet until browned and add spices.
- Combine beef, potatoes, and tomato sauce in the skillet and simmer for 15-20 minutes.
- Taste and adjust seasoning before serving.
Notes
Always use fresh ingredients for the best flavor.
Adjust jalapeño for spice level based on preference.
Consider adding beef broth for richer flavor.
