Ingredients

- 4 large eggs (room temperature)
- 2 1/4 cups milk
- 2 cups all-purpose flour
- 1 tablespoon granulated sugar
- 1/4 cup melted butter or canola oil
- A good pinch of salt
Instructions
- Combine all ingredients in a blender and blend until smooth.
- Refrigerate the batter for at least one hour.
- Preheat a nonstick skillet and add butter or oil.
- Pour batter into the skillet and tilt to spread evenly.
- Cook until edges are set and lightly browned, then flip.
- Stack cooked crepes and keep them warm.
Notes
Adjust skillet temperature for perfect cooking.
The first crepes may not be perfect; practice makes better.
