- 24 ounces refrigerated mashed potatoes

- 1 yellow onion, diced
- 1 ½ pounds lean ground beef
- 2 cups beef broth
- 1 tablespoon all-purpose flour
- 3 cups frozen mixed vegetables (diced carrots, peas, corn)
- 1 tablespoon tomato paste
- 1 teaspoon Worcestershire sauce
- 1 teaspoon salt
- ½ teaspoon black pepper
- Fresh chopped parsley for garnish
Instructions
- Preheat oven to 375°F and grease a baking dish.
- Cook refrigerated mashed potatoes per package instructions.
- Sauté diced onion in olive oil until soft.
- Add ground beef and cook until browned; drain excess fat.
- Whisk beef broth and flour together; add to skillet, boil, then thicken.
- Stir in vegetables, tomato paste, Worcestershire sauce, salt, and pepper.
- Spread beef mixture in baking dish and layer mashed potatoes on top.
- Bake for 20 minutes until golden brown.
- Garnish with parsley before serving.
Notes
For creamier mashed potatoes, add butter or warm milk.
Drain the fat from the beef to avoid greasiness.
Experiment with different vegetables based on preference.
