- 1 tablespoon canola oil or neutral cooking oil of choice
- 1 pound lean ground beef
- 1 ½ teaspoons chili powder
- 1 teaspoon dried oregano
- 1 teaspoon ground cumin
- ¾ teaspoon kosher salt
- ½ teaspoon garlic powder
- ½ teaspoon smoked paprika
- 1 small yellow or white onion ¼-inch diced
- 1 (15-ounce) can reduced-sodium black beans, rinsed and drained
- 1 cup prepared salsa
- 6 burrito-size flour tortillas about 10 inches
- 2 cups (8 ounces) shredded monterey jack, sharp cheddar, or mexican blend cheese

Instructions
- Heat the oil in a large skillet over medium-high heat and swirl to coat the pan. Add the beef, pressing it out into a 1/2-inch thickness. Let it sizzle for 3 to 4 minutes until a crust forms.
- Sprinkle chili powder, oregano, cumin, salt, garlic powder, and smoked paprika over the beef, then add the diced onion. Break the meat into small pieces and continue cooking, stirring occasionally, for about 4 minutes until the meat is cooked through.
- Incorporate the beans and salsa, cooking until the liquid has mostly evaporated and the beans are warmed, about 1 minute. Taste and adjust seasoning if necessary.
- To assemble the burritos, place one tortilla on a work surface. Sprinkle a scant 3 tablespoons of cheese down the center, followed by one-sixth of the beef and bean mixture. Add another scant 3 tablespoons of cheese on top.
- Fold the sides of the tortilla up over the filling, then roll it up to secure. Repeat with the remaining tortillas.
- To serve, warm a nonstick skillet over medium heat. Add a burrito seam side down and cook until golden and brown on both sides, about 1 to 2 minutes each. Let cool for a few minutes, then serve hot with desired toppings.
Notes
You can customize your burrito with different toppings like sour cream, avocado, hot sauce, or fresh cilantro.
For more spice, consider adding jalapenos to the beef mixture or using a spicy salsa.
These burritos can be made ahead and stored in the freezer for quick meals later.
