- 8 oz. egg noodles
- 1 lb. lean ground beef
- 1 cup onion, finely diced
- 2 tbsp butter or olive oil (omit if using fattier beef)
- 4 oz. bella mushrooms, chopped
- 2 garlic cloves, minced
- ¼ tsp dried thyme
- ½ tsp salt
- Pepper to taste
- 2 tbsp soy sauce
- 1 cup beef broth
- ½ cup half and half
- 1 tbsp cornstarch
- ¼ cup parmesan cheese, freshly grated
- Fresh thyme or parsley for garnish
Instructions
- Cook egg noodles according to package instructions, drain and set aside.
- In a large skillet, sauté ground beef and diced onion for 3-4 minutes.
- Add butter, mushrooms, garlic, thyme, salt, and pepper, sauté for another 3-4 minutes.
- Stir in soy sauce, then combine broth, half and half, and cornstarch in a bowl.
- Pour broth mixture into skillet, simmer until thickened, and stir in parmesan cheese.
- Add cooked noodles to skillet and toss until well coated. Garnish with fresh herbs.
Notes
Use lean ground beef for a healthier option.
You can substitute ground turkey or chicken for a lighter meal.
