Ingredients

  • 8 oz. egg noodles
  • 1 lb. lean ground beef
  • 1 cup onion, finely diced
  • 2 tbsp butter or olive oil (omit if using fattier beef)
  • 4 oz. bella mushrooms, chopped
  • 2 garlic cloves, minced
  • ¼ tsp dried thyme
  • ½ tsp salt
  • Pepper to taste
  • 2 tbsp soy sauce
  • 1 cup beef broth
  • ½ cup half and half
  • 1 tbsp cornstarch
  • ¼ cup parmesan cheese, freshly grated
  • Fresh thyme or parsley for garnish

Instructions

  • Cook egg noodles according to package instructions, drain and set aside.
  • In a large skillet, sauté ground beef and diced onion for 3-4 minutes.
  • Add butter, mushrooms, garlic, thyme, salt, and pepper, sauté for another 3-4 minutes.
  • Stir in soy sauce, then combine broth, half and half, and cornstarch in a bowl.
  • Pour broth mixture into skillet, simmer until thickened, and stir in parmesan cheese.
  • Add cooked noodles to skillet and toss until well coated. Garnish with fresh herbs.

Notes

Use lean ground beef for a healthier option.
You can substitute ground turkey or chicken for a lighter meal.
