  • ½ cup BBQ sauce

  • 1 cup mozzarella cheese, shredded
  • 1 small red bell pepper, chopped
  • ¼ cup red onion, sliced
  • 2 Tbsp cilantro, chopped
  • 2 Tbsp red pepper flakes (*optional, for additional heat)
  • 3 Tbsp grated parmesan cheese (*optional, for topping)

Instructions

  • Pat chicken breasts dry and season with olive oil, oregano, tarragon, and salt.
  • Cook chicken in a skillet over medium-high heat for 8-10 minutes on each side until internal temperature reaches 165ºF.
  • Preheat oven to 375°F.
  • Brush flatbreads with BBQ sauce.
  • Layer minced garlic, shredded mozzarella, chicken pieces, chopped onion, and red bell pepper on flatbreads.
  • Bake for 10-15 minutes until edges are golden and cheese is melted.
  • Sprinkle with cilantro and additional BBQ sauce if desired, slice, and serve.

For quicker preparation, consider using pre-cooked rotisserie chicken.
