- 2 large chicken breasts (*Rotisserie chicken can also be used for convenience)
- 1 tsp olive oil
- ½ tsp dried oregano
- ¼ tsp dried tarragon
- ¼ tsp salt
- 2 flatbreads (*Naan can be substituted)
- ½ cup BBQ sauce
- 2 garlic cloves, minced
- 1 cup mozzarella cheese, shredded
- 1 small red bell pepper, chopped
- ¼ cup red onion, sliced
- 2 Tbsp cilantro, chopped
- 2 Tbsp red pepper flakes (*optional, for additional heat)
- 3 Tbsp grated parmesan cheese (*optional, for topping)
Instructions
- Pat chicken breasts dry and season with olive oil, oregano, tarragon, and salt.
- Cook chicken in a skillet over medium-high heat for 8-10 minutes on each side until internal temperature reaches 165ºF.
- Preheat oven to 375°F.
- Brush flatbreads with BBQ sauce.
- Layer minced garlic, shredded mozzarella, chicken pieces, chopped onion, and red bell pepper on flatbreads.
- Bake for 10-15 minutes until edges are golden and cheese is melted.
- Sprinkle with cilantro and additional BBQ sauce if desired, slice, and serve.
Notes
For quicker preparation, consider using pre-cooked rotisserie chicken.
Adjust BBQ sauce to match your flavor preferences.
