  • 1/4 cup sour cream
  • 2 teaspoons cinnamon
  • 2 teaspoons vanilla extract
  • 1/2 cup salted butter
  • 1 cup brown sugar
  • 1 teaspoon cinnamon
  • 1/4 teaspoon kosher salt
  • 1/3 cup whiskey
  • 1 cup chopped prunes
  • 3 bananas, sliced into chunks
  • 1/2 cup heavy cream, cold
  • 3 tablespoons powdered sugar
  • 1/2 teaspoon cinnamon
  • Pinch of kosher salt
  • Pecans for garnish

Instructions

  • Preheat oven to 350°F and prepare springform pan with parchment.
  • Mix graham crackers, sugar, cinnamon, and salt; add melted butter and press into pan.
  • Bake crust for 10-12 minutes and let cool.
  • Boil water for the cheesecake water bath.
  • Mix cream cheese, brown sugar, and cornstarch; add eggs, bananas, sour cream, vanilla, and cinnamon.
  • Pour mixture into cooled crust; add boiling water to the oven.
  • Bake cheesecake for 1 hour 15-20 minutes; cool and chill for at least 4 hours.
  • Prepare caramel sauce; cook butter, brown sugar, cinnamon, and salt; add prunes and bananas.
  • Add whiskey and flambé; cool sauce.
  • Whip cream with sugar, cinnamon, and salt.
  • Assemble cheesecake with caramel sauce, fruit mixture, and whipped cream.
