- 1 cup chopped prunes
- 3 bananas, sliced into chunks
- 1/2 cup heavy cream, cold
- 3 tablespoons powdered sugar

- Pecans for garnish
Instructions
- Preheat oven to 350°F and prepare springform pan with parchment.
- Mix graham crackers, sugar, cinnamon, and salt; add melted butter and press into pan.
- Bake crust for 10-12 minutes and let cool.
- Boil water for the cheesecake water bath.
- Mix cream cheese, brown sugar, and cornstarch; add eggs, bananas, sour cream, vanilla, and cinnamon.
- Pour mixture into cooled crust; add boiling water to the oven.
- Bake cheesecake for 1 hour 15-20 minutes; cool and chill for at least 4 hours.
- Prepare caramel sauce; cook butter, brown sugar, cinnamon, and salt; add prunes and bananas.
- Add whiskey and flambé; cool sauce.
- Whip cream with sugar, cinnamon, and salt.
- Assemble cheesecake with caramel sauce, fruit mixture, and whipped cream.
Notes

Use a water bath to prevent the cheesecake from cracking.
