- 1/4 cup butter
- 1/4 cup all-purpose flour
- 1/2 teaspoon kosher salt

- 2 cups whole milk (room temperature)
- 1/3 cup plain Greek yogurt (2% or whole milk)
- 2 cups shredded sharp cheddar cheese
- 1 cup shredded gruyere cheese
Instructions
- Cook pasta in boiling salted water for 5-6 minutes until just undercooked. Drain and set aside.
- In a saucepan, melt butter and whisk in flour, salt, pepper, and spices. Cook until resembling wet sand.
- Gradually add milk, whisking continuously, and cook until thick enough to coat the back of a spoon.
- Remove from heat, whisk in cheddar, gruyere, and Greek yogurt.
- Combine pasta with cheese sauce in a mixing bowl.
- Pour into a greased casserole dish, top with remaining cheese, and bake at 350°F for 15-20 minutes.
- Broil for 3-5 minutes for a crispy topping.
Notes
Use fresh ingredients for enhanced flavor.
Let the dish sit for a few minutes after baking for easier serving.
