Instructions

  • Cook pasta in boiling salted water for 5-6 minutes until just undercooked. Drain and set aside.
  • In a saucepan, melt butter and whisk in flour, salt, pepper, and spices. Cook until resembling wet sand.
  • Gradually add milk, whisking continuously, and cook until thick enough to coat the back of a spoon.
  • Remove from heat, whisk in cheddar, gruyere, and Greek yogurt.
  • Combine pasta with cheese sauce in a mixing bowl.
  • Pour into a greased casserole dish, top with remaining cheese, and bake at 350°F for 15-20 minutes.
  • Broil for 3-5 minutes for a crispy topping.
