Baked Cinnamon Sugar Donuts

Ingredients

  • 1 cup (125g) all-purpose flour (spooned & leveled)
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 large egg, at room temperature
  • 1/3 cup (65g) packed light or dark brown sugar
  • 1/4 cup (60g/ml) milk, at room temperature
  • 1/4 cup (60g) sour cream or plain yogurt, at room temperature
  • 2 tablespoons (28g) unsalted butter, melted
  • 1 and 1/2 teaspoons pure vanilla extract
  • 1 cup (200g) granulated sugar
  • 1 teaspoon ground cinnamon
  • 1/2 cup (8 tbsp; 113g) unsalted butter, melted

Instructions

  1. Preheat the oven to 350°F (177°C) and grease donut pan(s) with nonstick spray.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In a separate medium bowl, mix the egg, brown sugar, milk, and sour cream until smooth, then add in the melted butter and vanilla. Pour the wet mixture into the dry ingredients and stir until just combined, being careful not to overmix.
  4. Spoon the batter into donut cavities, or transfer it to a zip-top bag, cut off a corner, and pipe the batter in, filling each cavity halfway.
  5. Bake for 10 minutes until edges are lightly browned; check by pressing the top of a donut – it should spring back if done.
  6. Let the donuts cool in the pan for 2 minutes before transferring to a cooling rack. Grease the pan again and bake the remaining batter.
  7. Mix sugar and cinnamon in a bowl, then dip each donut in melted butter followed by the cinnamon sugar mixture, coating all sides.
  8. Serve immediately for the best taste. Store leftovers tightly at room temperature for 1–2 days or refrigerate for up to a week.

Notes

For easier piping, use a zip-top bag for the batter.
Make sure all dairy ingredients are at room temperature for a smoother batter.
These donuts are best enjoyed fresh but can be stored for later.
