- 6 bone-in skin-on chicken thighs
- 2 tablespoons olive oil
- Fresh herbs such as parsley, basil, cilantro, finely minced; optional for garnishing

Instructions
- Preheat the oven to 425°F (220°C) and prepare a 9×13-inch baking dish or spray a baking sheet with cooking spray. Optionally, line the baking sheet with foil for easier cleanup.
- In a medium bowl, mix the brown sugar with paprika, garlic powder, onion powder, italian seasoning, salt, black pepper, and cayenne or chili powder if using.
- Pat the chicken thighs dry with a paper towel to ensure crispy skin while baking.
- Drizzle olive oil over the chicken in a bowl, ensuring each piece is well-coated.
- Sprinkle the seasoning mix evenly over the chicken, pressing it into the skin lightly.
- Place the chicken in the oven and bake uncovered for 35-40 minutes, or until the internal temperature reaches 165°F (74°C). Rotate the baking pan halfway through if using a baking dish.
- For extra crispiness, broil the chicken for 1-2 minutes on high, watching closely to prevent burning.
- Let the chicken rest for 5 minutes before serving, garnishing with fresh herbs and lemon wedges if desired.

You can substitute other types of chicken if needed, but be aware that cooking times may vary.
