- 12 oz uncooked bacon
- 2 garlic cloves, pressed
- 2 Tbsp Dijon mustard
- 1 Tbsp honey (plus more for drizzling)
- Salt, to taste
Instructions
- Preheat oven to 425°F (220°C) and grease a cast iron skillet or roasting pan.
- Pat the pork tenderloin dry and rub it with the Dijon mustard, honey, garlic, and salt.
- Wrap the pork in overlapping strips of bacon and secure the ends underneath.
- Drizzle honey over the bacon-wrapped pork and place it in the roasting pan.
- Bake for 25 to 35 minutes, reaching an internal temperature of 145°F.
Notes
Use a meat thermometer to check for doneness.
Let the pork rest for a few minutes before slicing for juicier results.
Broil for an extra 2-3 minutes at the end for crispier bacon.
