Ingredients

  • 1 pound ground chicken (93/7% fat preferred)
  • 1 pound ground chicken sausage (pork is also fine)
  • 1/2 cup panko crumbs
  • 1 large egg
  • 1 tablespoon fresh grated ginger (or 1 1/2 teaspoons ground ginger)
  • 3 garlic cloves, chopped
  • 1/4 cup low-sodium soy sauce
  • 1/2 cup chopped onion (greener parts of green onions reserved for garnish)
  • 1/2 cup chopped water chestnuts (8 oz can, drained)
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground pepper
  • 1/3 cup barbecue sauce
  • 1/3 cup ketchup
  • 1 tablespoon soy sauce
  • 1 teaspoon fresh grated ginger (or 1/2 teaspoon ground ginger)
  • 1 tablespoon brown sugar

Instructions

  • In a large bowl, combine chicken, sausage, panko, egg, ginger, garlic, soy sauce, onion, water chestnuts, salt, and pepper.
  • Transfer the mixture to a sprayed loaf pan and pack it firmly.
  • In another bowl, mix barbecue sauce, ketchup, soy sauce, ginger, and brown sugar for the glaze.
  • Spread the glaze over the meatloaf.
  • Bake at 400°F (204°C) for about 50 minutes until the internal temperature reaches 165°F (74°C).
  • Cool for 10 minutes, slice, and serve with green onion garnish.

Notes

Ensure the mixture is well combined to avoid dry spots.
Experiment with different ground meats, like turkey.
Check the internal temperature for perfect doneness.
