Instructions
- Preheat oven to 350°F (175°C) and prepare baking dish.
- Blend softened butter and brown sugar until smooth.
- Add baking soda, oats, and flour; mix until crumbly.
- Press 2 cups of the mixture into the bottom of the dish.
- Spread apricot preserves over the crust, leaving a ¼ inch border.
- Sprinkle remaining oat mixture on top evenly.
- Bake for 30-35 minutes until golden brown, then cool completely.
- Cut into bars and serve.
