Instructions
- Preheat oven to 130°C (270°F) and prepare sterilized jars.
- Wash apricots, cut in half, and remove stones.
- Combine apricots, lemon juice, and water in a saucepan.
- Simmer until apricots are tender, about 10-15 minutes.
- Blend if smoother texture is desired.
- Stir in the sugar until dissolved and bring to a rolling boil.
- Perform the wrinkle test to check for doneness.
- Ladle into sterilized jars, seal tightly.
