  • 1/2 cup rolled oats
  • 1/2 cup chopped almonds (toasted preferred)
  • 1/4 cup light brown sugar, packed
  • 1 cup apricot jam
  • 4 ounces dried apricots, diced (about 1/2 cup)
  • 1 tablespoon lemon juice (or orange juice)

Instructions

  • Preheat the oven to 375°F and prepare the baking pan with parchment paper.
  • Whisk together the all-purpose flour, almond flour, granulated sugar, and salt.
  • Incorporate the butter into the flour mixture until it resembles wet sand.
  • Press the mixture into the bottom of the prepared pan and bake for 15 minutes.
  • Combine the reserved flour mixture with rolled oats, chopped almonds, and light brown sugar to make the streusel topping.
  • Add butter to the streusel mixture and form clumps.
  • Mix apricot jam, diced dried apricots, and lemon juice in a bowl.
  • Spread the apricot mixture over the baked crust and sprinkle the streusel topping on top.
  • Bake for an additional 30 minutes until golden brown.
  • Allow to cool completely or until slightly warm before cutting into pieces.

Notes

Ensure butter is softened for easier mixing.
Chop almonds finely for better texture distribution in the topping.
