- 1 1/2 cups all-purpose flour
- 1 cup almond flour (or replace with additional all-purpose flour)
- 2/3 cup granulated sugar
- 1/2 teaspoon salt
- 18 tablespoons unsalted butter (2 sticks plus 2 tablespoons), softened
- 1/2 cup rolled oats
- 1/2 cup chopped almonds (toasted preferred)
- 1/4 cup light brown sugar, packed
- 1 cup apricot jam
- 4 ounces dried apricots, diced (about 1/2 cup)
- 1 tablespoon lemon juice (or orange juice)
Instructions
- Preheat the oven to 375°F and prepare the baking pan with parchment paper.
- Whisk together the all-purpose flour, almond flour, granulated sugar, and salt.
- Incorporate the butter into the flour mixture until it resembles wet sand.
- Press the mixture into the bottom of the prepared pan and bake for 15 minutes.
- Combine the reserved flour mixture with rolled oats, chopped almonds, and light brown sugar to make the streusel topping.
- Add butter to the streusel mixture and form clumps.
- Mix apricot jam, diced dried apricots, and lemon juice in a bowl.
- Spread the apricot mixture over the baked crust and sprinkle the streusel topping on top.
- Bake for an additional 30 minutes until golden brown.
- Allow to cool completely or until slightly warm before cutting into pieces.
Notes
Ensure butter is softened for easier mixing.
Chop almonds finely for better texture distribution in the topping.
