- 1 cup sweet red apples, diced
- 1 cup water
- ½ cup organic sugar
- 4 sprigs dried thyme
- 3 oz apple thyme simple syrup (made previously)
- 1 ½ oz bourbon
- 1 oz freshly squeezed lemon juice
- 3 oz soda water (lemon or unflavored)
- 3 slices of apple (optional, for garnish)
- 1–2 sprigs dried thyme (optional, for garnish)

Instructions
- Combine diced apples, water, organic sugar, and dried thyme in a saucepan and boil.
- Reduce heat and simmer for 10-15 minutes until syrup thickens.
- Let syrup cool completely.
- Muddle apple pieces with cooled syrup in a cocktail shaker.
- Shake with ice until chilled.
- Pour syrup, bourbon, lemon juice, and soda water into a glass with ice.
- Garnish with apple slices and thyme, then serve.
Notes
Ensure the syrup cools completely for best flavor.
Adjust bourbon quantity to your taste.
Experiment with fresh thyme for a bolder flavor.
