- 2 cups diced apples (about 2 large or 3 medium apples; Honeycrisp or Granny Smith recommended)
- 2 tablespoons unsalted butter
- ¼ cup brown sugar
- 1 teaspoon ground cinnamon
- ¼ teaspoon ground nutmeg
- 1 teaspoon cornstarch
- 1 tablespoon water (for cornstarch slurry)
- 2 sheets frozen puff pastry (thawed; from a 17.3-ounce package, such as Pepperidge Farm)
- 1 large egg
- 1 tablespoon water (for egg wash)
- ½ cup powdered sugar
- 1–2 teaspoons milk
- ¼ teaspoon vanilla extract
Instructions
- Preheat oven to 400°F and line a baking sheet with parchment paper.
- Melt butter in a skillet, add apples, brown sugar, cinnamon, and nutmeg, and cook until apples are tender.
- Mix cornstarch and water to make a slurry, add to skillet, and cook until filling thickens. Let cool.
- Roll out thawed puff pastry, cut into 8 squares.
- Fill each square with apple filling, fold and seal edges.
- Brush with egg wash, cut slits on top, and bake for 20-25 minutes until golden brown.
- Whisk powdered sugar, milk, and vanilla for icing, drizzle over cooled turnovers.
Notes
Ensure apple filling cools completely before filling puff pastry to prevent sogginess.
For best results, keep puff pastry cold before baking for optimal flakiness.
Store leftovers in an airtight container at room temperature for up to 2 days.
