Instructions
- Melt 4 tbsp butter in a saucepan over medium heat.

- In a bowl, whisk together eggs, vanilla, and buttermilk.
- In another bowl, mix flour, brown sugar, cinnamon, apple pie spice, baking powder, baking soda, and salt.
- Combine wet and dry ingredients gently, let batter rest for 10 minutes.
- Preheat a nonstick pan over medium heat and grease lightly.
- Pour 1/4 cup batter onto the hot surface, cook until bubbles appear, then flip and cook until golden.
- Serve pancakes topped with the warm apple mixture.
