- 2 pounds boneless skinless chicken thighs
- 1 teaspoon Italian seasoning
- ½ teaspoon paprika
- ½ teaspoon chili powder
- ½ teaspoon kosher salt
- ¼ teaspoon black pepper
- 2 tablespoons extra virgin olive oil
- 1 tablespoon unsalted butter
- ¼ cup (50 g) light brown sugar, packed
- 2 medium lemons, juiced (about 3 tablespoons)
- 2 large Honeycrisp apples, cored and sliced into ½-inch slices
- 1 medium lemon, sliced for garnish
- Fresh thyme, for garnish
Instructions
- Pat chicken thighs dry and season with Italian seasoning, paprika, chili powder, kosher salt, and black pepper.
- Heat oil in a skillet and sear chicken thighs for 6-8 minutes on each side until golden brown.
- Transfer chicken to a plate and keep warm.
- In the same skillet, melt butter, then add brown sugar and lemon juice, scraping up brown bits.
- Add sliced apples and sauté for about 5 minutes until caramelized.
- Return the chicken to the skillet, coating it in the apple mixture.
- Garnish with fresh thyme and lemon slices before serving.
Notes
For even cooking, ensure chicken is at room temperature before cooking.
