Ingredients

  • Nonstick cooking spray, for greasing
  • 1 ½ cups all-purpose flour
  • 2 tsp baking powder
  • ½ tsp kosher salt
  • 2 tsp cinnamon
  • ¼ cup unsalted butter, melted
  • ¼ cup granulated sugar
  • 1 large egg
  • ½ tsp vanilla extract
  • ½ cup no-sugar-added applesauce
  • 1 ½ cups peeled and finely diced Honeycrisp apples (about 2 medium apples)
  • 2 cups powdered sugar
  • ⅓ cup plus 2 tablespoons apple cider or apple juice

Instructions

  • Preheat oven to 400°F (200°C) and grease a baking sheet.
  • In a medium bowl, whisk together flour, baking powder, salt, and cinnamon.
  • In a large bowl, melt butter and whisk in sugar until fluffy.
  • Add egg, vanilla, and applesauce; mix until smooth.
  • Stir in flour mixture and fold in diced apples.
  • Scoop mounds of batter onto the baking sheet.
  • Bake for 10 minutes until golden and cooked through.
  • Prepare glaze by mixing powdered sugar and cider/juice.
  • Glaze fritters, broil for 2-4 minutes, and apply final glaze.

Notes

Finely dice apples for even flavor in each bite.
Do not skip the broiling step for caramelization.
