  • 2 eggs, at room temperature
  • 1 tsp vanilla extract
  • 1 cup (244 g) unsweetened apple butter
  • 3/4 cup (180 ml) buttermilk, at room temperature
  • 2 oz (56 g) cream cheese, softened
  • 2 tbsp (30 ml) pure maple syrup
  • 34 tbsp (2532 g) powdered sugar (adjust for sweetness)
  • 1 tbsp (15 ml) whole milk

Instructions

  • Make crumb topping: mix butter, brown sugar, flour, and spices until coarse crumbs form; refrigerate.
  • Prepare spiced apples: cook diced apples with spices and brown sugar for about 10 minutes; set aside to cool.
  • Make cake batter: preheat oven to 350°F. Mix dry ingredients, then cream butter and sugar. Add eggs and vanilla, then mix in apple butter and buttermilk.
  • Combine wet and dry ingredients until just mixed. Pour batter into prepared pan, layer spiced apples, then add crumb topping.
  • Bake for 65-80 minutes until a toothpick comes out clean. Cool in the pan for 30 minutes, then transfer to a rack.
  • Prepare cream cheese frosting: mix cream cheese and maple syrup, blend in powdered sugar, then add milk.
