- 2 1/2 cups all-purpose flour
- 1 cup oat flour
- 1 1/2 cups granulated sugar
- 1 tsp cinnamon
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda

- 1 cup apple cider
- 3/4 cup applesauce (or apple butter)
- 3/4 cup vegetable oil (corn, canola, safflower)
- 3 large eggs (at room temperature)
- 2 tsp vanilla extract
- 6 Tbsp melted butter
- 1 cup sugar (for coating)
- 1 tsp cinnamon (for coating, adjust to taste)
Instructions
- Preheat oven to 350°F (175°C) and butter muffin pans.
- Whisk together dry ingredients in a large bowl.
- In a separate bowl, combine wet ingredients and mix until smooth.
- Pour wet mixture into dry ingredients and mix gently.
- Fill muffin cups 2/3 full with batter.
- Bake for about 19 minutes or until a toothpick comes out clean.
- Let muffins cool for 5-10 minutes in the pan.
- Mix sugar and cinnamon for coating.
- Brush muffins with melted butter and coat in cinnamon sugar.
Notes
Ensure eggs are at room temperature for easier mixing.
For a different flavor, experiment with spices like nutmeg or allspice.
