- 3 apples, sliced very thin
- 5 oz arugula
- 1/4 cup red onion, sliced thin
- 1/2 cup figs, chopped
- 1/2 cup goat cheese crumbles
- 1 cup pecan halves
- 2 tablespoons maple syrup (for the pecans)
- Pinch of sea salt (for the pecans)
- 1/2 cup olive oil
- 2 teaspoons maple syrup (for the dressing)
- 1 teaspoon lemon juice
- 1 1/2 teaspoons Dijon mustard
- 1/2 teaspoon black pepper
- 1 garlic clove, minced
- 3 tablespoons balsamic vinegar
- 1/4 – 1/2 teaspoon sea salt, or to taste
Instructions
- Preheat oven to 350°F and toss pecans with maple syrup and sea salt.
- Spread pecans on a baking sheet and bake for 5-7 minutes, then let cool.
- Whisk together dressing ingredients in a bowl.
- In a large bowl, combine arugula, sliced apples, figs, and cooled pecans.
- Sprinkle goat cheese on top and drizzle with dressing.
- Toss gently and serve immediately.
Notes
Use a variety of apple types for enhanced flavor.
Adjust sweetness of the dressing to your preference.
Allow pecans to cool completely before mixing to maintain freshness.
