- ½ cup mayonnaise
- ½ cup honey
- ½ cup Dijon mustard
- ½ teaspoon garlic powder
- 2 teaspoons lemon juice
- 4 boneless skinless chicken breasts (about 1½ to 2 pounds)
- 6 slices bacon (cut in half or diced)
- 8 ounces mushrooms (sliced)
- ½ teaspoon Kosher salt
- ½ teaspoon freshly ground black pepper
- ½ teaspoon paprika
- 2 tablespoons butter
- 2 cups Colby Jack cheese (shredded)
- Fresh chopped parsley (optional for garnish)
Instructions
- Combine mayonnaise, honey, Dijon mustard, garlic powder, and lemon juice to make the marinade.
- Marinate the chicken in half the marinade for at least 30 minutes, preferably overnight.
- Preheat the oven to 400°F.
- Cook bacon in a skillet until crispy, then sauté the mushrooms in the same skillet until golden.
- Season marinated chicken, then cook in the skillet for 5 minutes a side.
- Top chicken with bacon, mushrooms, and cheese, then bake for 8-10 minutes until done.
- Garnish with parsley and serve with reserved sauce.
Notes
Marinating longer enhances flavor significantly.
Ensure the skillet is hot before adding chicken for best results.
