  • ½ teaspoon garlic powder
  • 2 teaspoons lemon juice
  • 4 boneless skinless chicken breasts (about to 2 pounds)
  • 6 slices bacon (cut in half or diced)
  • 8 ounces mushrooms (sliced)
  • ½ teaspoon Kosher salt
  • ½ teaspoon freshly ground black pepper
  • ½ teaspoon paprika
  • 2 tablespoons butter
  • 2 cups Colby Jack cheese (shredded)

Instructions

  • Combine mayonnaise, honey, Dijon mustard, garlic powder, and lemon juice to make the marinade.
  • Marinate the chicken in half the marinade for at least 30 minutes, preferably overnight.
  • Preheat the oven to 400°F.
  • Cook bacon in a skillet until crispy, then sauté the mushrooms in the same skillet until golden.
  • Season marinated chicken, then cook in the skillet for 5 minutes a side.
  • Top chicken with bacon, mushrooms, and cheese, then bake for 8-10 minutes until done.
  • Garnish with parsley and serve with reserved sauce.

Notes

Marinating longer enhances flavor significantly.
Ensure the skillet is hot before adding chicken for best results.
