- 2 cups shredded rotisserie chicken
- 1 package (8 ounces) cream cheese, room temperature
- 1½ cups sharp cheddar cheese, shredded
- 1 cup black beans, drained and rinsed
- 1 can (15.25 ounces) sweet corn, drained
- 1 can (14.5 ounces) diced tomatoes, drained
- 2 tablespoons taco seasoning
- 1 cup fresh pico de gallo
- 6 flour tortillas, burrito size
- Cooking spray
- Sour cream, for garnish
- Pico de gallo, for garnish
Instructions
- In a large bowl, combine shredded chicken, cream cheese, cheddar cheese, black beans, corn, diced tomatoes, taco seasoning, and pico de gallo. Mix well.
- Place about 1 cup of the mixture onto each tortilla, fold in the sides, and roll tightly.
- Spray burritos with cooking spray and place in a preheated air fryer at 400°F. Cook for 5 minutes.
- Flip the burritos, spray the other side, and cook for another 5 minutes until golden and crispy.
Notes
Use room temperature cream cheese for easier mixing.
Do not overfill burritos to make rolling easier.
Ensure space between burritos in the air fryer for proper cooking.
