Biscotti

My first experience with biscotti was during a family gathering when my Aunt Lucy pulled a batch out of the oven. The aroma of toasted almonds mingling with the sweetness of vanilla filled the kitchen and immediately captured my heart. I couldn’t wait to dunk these crunchy delights into my coffee! Since then, I’ve always loved preparing biscotti at home, and I’m excited to share this recipe with you. Once you try making these, I’m sure you’ll find them just as irresistible!

Why You’ll Love This Recipe

  • Simple & Quick: This recipe takes just about 25 minutes of prep time, and the baking does the rest.
  • Irresistible Flavor: With hints of vanilla and almond, each bite is a flavor explosion, enhanced by the crunch of toasted almonds.
  • Eye-Catching Appeal: Biscotti are impressive to serve and look beautiful on a platter, making them perfect for sharing.
  • Flexible Serving: Ideal for dipping in coffee or tea, these cookies are great for breakfast, snacks, or dessert.
  • Diet-Friendly Options: Easily make changes, like using gluten-free flour, to cater to dietary needs without sacrificing taste.

Ingredients You’ll Need

  • 1 1/4 cups almonds: Using whole, raw, unsalted almonds gives you the freshest flavor. Toasting them enhances their nuttiness.
  • 60g (4 tbsp) unsalted butter: This adds richness to the dough. It’s best when melted and cooled but still fluid. As an alternative, you can substitute with light olive oil for a lighter option.
  • 3/4 cup caster sugar: Caster sugar (or superfine sugar) dissolves quickly, creating a smooth dough. If necessary, you can use granulated sugar as well.
  • 2 large eggs: Ideally, use fridge-cold eggs for the best texture. Aim for 50-55g per egg, which helps to bind the dough beautifully.
  • 1 tsp vanilla extract: This adds a warm, inviting flavor. Always choose pure vanilla extract for the best depth of flavor.
  • 3/4 tsp almond extract: This enhances the almond flavor but can be substituted with more vanilla extract if preferred.
  • 1 3/4 cups plain flour: All-purpose flour provides the right structure for your biscotti. For a gluten-free version, use a gluten-free flour blend.
  • 2 tsp baking powder: This helps to achieve a light and airy texture. If you don’t have baking powder, you can substitute with 1/2 tsp baking soda.
  • 1/4 tsp cooking salt: A pinch of kosher salt brings balance to the sweetness. If using table salt, halve the amount, or if using flaky salt, increase it by 50%.

How to Make Biscotti

  1. Preheat the oven: Start by preheating your oven to 180°C/350°F (160°C for fan-forced). This temperature is perfect for toasting the almonds.
  2. Toast the almonds: Spread the almonds in a single layer on a baking tray and bake for about 10 minutes until they are fragrant and lightly golden. Don’t forget to shake the tray halfway through for even toasting. Allow them to cool completely before incorporating into the dough.
  3. Mix wet ingredients: In a large mixing bowl, whisk together the melted unsalted butter (or olive oil) and caster sugar until well combined. Add the fridge-cold eggs, vanilla extract, and almond extract, whisking until smooth.
  4. Combine dry ingredients: Gradually add the all-purpose flour, baking powder, and salt to the wet mixture. Use a wooden spoon to gently mix until the flour is almost fully incorporated.
  5. Incorporate almonds: Fold in the cooled toasted almonds, mixing until fully combined. The dough will be a bit sticky but firm enough to handle. If it’s overly sticky, don’t hesitate to refrigerate it for 15 minutes.
  6. Shape into logs: Divide the dough into two equal portions. On a parchment-lined baking tray, shape each portion into a log about 5 cm wide, 2 cm tall, and 27 cm long, leaving about 7 cm apart as they will spread.
  7. Bake the first time: Place in the preheated oven and bake for about 25 minutes, or until they turn light golden and are firm to the touch.
  8. Cool completely: Allow the logs to cool on the tray for approximately 1 hour. This step is crucial as a cooler log is much easier to slice.
  9. Preheat the oven again: While the logs are cooling, preheat the oven to 150°C/300°F (130°C for fan-forced).
  10. Slice the logs: Once cool, slice the logs diagonally into pieces about 7mm (1/3 inch) thick. You can choose to slice them thicker if that’s your preference, but I find thinner pieces offer the best dip-and-enjoy experience.
  11. Bake the second time: Arrange the slices on lined baking trays. Bake for 12 minutes, flip them over, and then bake for another 12 minutes until they are golden and crisp. Keep in mind that thicker slices will require extra baking time.
  12. Complete the cooling: Let the biscotti cool on the tray; they will continue to crisp up as they cool down. Once cooled, they are ready to be enjoyed or stored!

Storing & Reheating

To keep your biscotti fresh, store them in an airtight container at room temperature for up to two weeks. If you want to stretch their shelf life, feel free to refrigerate them for about a month, but be sure to use a well-sealed container. For long-term storage, you’ll love how well they freeze. Just place them in a freezer-safe bag, and they’ll keep for up to three months. When you’re ready to enjoy, simply heat them in an oven at 150°C/300°F for about 5 minutes to refresh their delightful crunch.

Chef’s Helpful Tips

  • To avoid crumbling when slicing, ensure the biscotti is completely cool before cutting. A good, sharp serrated knife will help you achieve clean slices.
  • For best results, use room temperature butter when whisking into your batter; it combines more easily with sugar and eggs.
  • Experiment with flavors! Feel free to add citrus zest or spices like cinnamon for a unique twist on the classic recipe.
  • If you’re using gluten-free flour, ensure it’s a blend that contains a binder like xanthan gum for better structure.
  • Biscotti can make a perfect gift! Wrap them in cellophane with a pretty ribbon for a delightful homemade present.

The journey of making biscotti is as delightful as the biscuit itself. The simple ingredients unite in a symphony of flavors and textures that transform into something extraordinary. Their dual baking process ensures a satisfying crunch that’s hard to resist. Once you get this down, don’t hesitate to experiment with different nuts, fruits, or spices that tickle your taste buds. Remember, there’s no wrong way to enjoy this wonderful treat, whether you’re sharing with friends or indulging in a moment of me-time. Happy baking!

Recipe FAQs

Can I use other nuts in my biscotti?

Absolutely! While almonds are traditional, other nuts like hazelnuts or pistachios work beautifully too. Just remember to toast them for that extra flavor!

How can I make biscotti chocolate-flavored?

Incorporate chocolate by adding chocolate chips or cocoa powder to the dough. For chocolate-dipped biscotti, dip the cooled cookies half-way into melted chocolate and let it set.

Why are my biscotti not crispy enough?

If your biscotti are soft after the second bake, they may not have baked long enough. Ensure they are a light golden color and feel firm when done. You could also try reducing the thickness of your slices for more crunch.

Can I adjust the sweetness of my biscotti?

Of course! If you prefer less sweetness, you can reduce the sugar by about 1/4 cup. However, keep in mind that sugar also contributes to the texture, so some experimentation may be necessary!
