Instructions
- Squeeze excess moisture from shredded zucchini and let it rest with salt.
- Combine zucchini with flour, eggs, scallions, salt, and pepper in a bowl.
- Heat olive oil in a sauté pan over medium heat.
- Scoop mixture into pan, pressing lightly into round shapes, and cook until golden brown on both sides.
- Transfer to paper towels to drain excess oil and season with salt.
- Serve with sour cream and optional scallion garnish.
Notes
Squeeze out as much moisture from the zucchini for crispy fritters.
Maintain medium heat to achieve a golden brown crust without burning.
Leftover fritters can be stored in an airtight container for up to 3 days.
