- 4 Persian cucumbers or 1 English cucumber
- 1 medium ripe avocado
- ¼ cup crumbled feta cheese
- ¼ cup chopped pistachios
- ¼ cup chopped fresh dill
- ¼ cup chopped fresh chives
- 2–3 tablespoons extra virgin olive oil
- 1 tablespoon lemon juice
- 1 tablespoon Dijon mustard
- 2 teaspoons honey
- 2 cloves garlic – peeled and minced
- Salt and pepper – to taste
Instructions
- Wash and dry the cucumbers, then cut in half and smash gently.
- Chop smashed cucumbers into 1-inch cubes and place in a mixing bowl.
- Add chopped avocado, feta, pistachios, dill, and chives.
- In a separate bowl, whisk together olive oil, lemon juice, mustard, honey, garlic, salt, and pepper.
- Pour dressing over the salad and toss to combine.

Allow the salad to chill for a few minutes before serving.
