Ingredients

  • 4 Persian cucumbers or 1 English cucumber
  • 1 medium ripe avocado
  • ¼ cup crumbled feta cheese
  • ¼ cup chopped pistachios
  • ¼ cup chopped fresh dill
  • ¼ cup chopped fresh chives
  • 23 tablespoons extra virgin olive oil
  • 1 tablespoon lemon juice
  • 1 tablespoon Dijon mustard
  • 2 teaspoons honey
  • 2 cloves garlic – peeled and minced
  • Salt and pepper – to taste

Instructions

  • Wash and dry the cucumbers, then cut in half and smash gently.
  • Chop smashed cucumbers into 1-inch cubes and place in a mixing bowl.
  • Add chopped avocado, feta, pistachios, dill, and chives.
  • In a separate bowl, whisk together olive oil, lemon juice, mustard, honey, garlic, salt, and pepper.
  • Pour dressing over the salad and toss to combine.
